I've just bought a slow cooker with some of the gift vouchers that we got for our wedding. We had a tiny one before that cooked barely enough for 2, the new one is a whopper in comparison (this is the one I went for.)
The first thing I've cooked in it is one of my favourites; Spanish stew. You can make it as spicy as you like with the addition of smoked paprika. Here is the recipe if you want to give it a try, it's foolproof!
Serves 4
Jar of marinated red peppers
Tin of butter beans or canellini beans
Tin of chopped plum tomatoes
Squeeze of tomato puree
1 big chunk chorizo chopped into bitesize pieces
450g pork shoulder chopped into bitesize pieces
1 clove garlic crushed
1 tsp smoked paprika
1 tsp paprika
1 sprig thyme
Handful black olives (optional)
Salt & pepper to season
Drain the peppers and beans and add with all other ingredients to the crock pot (I didn't bother to brown the meat off and it was fine). If the mix looks too thick add some passata.
Cook on high for 4 hours or low for 8-10 hours (until pork is tender).
Serve with crusty bread. Alternatively add chopped new potatoes to the stew.
